I assume you're asking why I have recipes on a site that's dedicated to mystery novels? Well, why not? We all have to eat. You eat. I eat. Paul and Jacquie eat. And not at McDonalds. Not usually. So we have recipes.
Tomato-Kiwi Salad
2 cups mixed greens
2 tsp. sundried Tomato salad dressing
a few shakes of pepper
1 kiwi, peeled and diced
a sprinkling of walnuts, sliced almonds, or sunflower seeds, etc.
I frequently have this for lunch with yogurt.
24 Hour Red and White Salad
This is my sons' favorite salad. I/we make it at Thanksgiving and Christmas and other special occasions.
I got it from my mom, but I have no idea where she got it.
2 eggs (beaten)
2 Tbsp. vinegar
2 Tbsp sugar
2 lb. red grapes, halved and seeded
1 cup whipping cream (or use dream whip)
2 cups marshmallows
1. Cook and stir eggs, sugar, & vinegar in a saucepan over low heat just until it thicken. Don't overcook. Let it cool before using.
2. Halve the grapes with a paring knife. If there are seeds, take them out.
3. Whip cream or dream whip in a large bowl.
4. Gently fold in the cooled egg mixture, the grapes, and the marshmallows. Store in the fridge overnight.
Tomato Corn Soup
1 can tomato soup
1 can water
2 whole tomatoes, cut in thin wedges
2 Tbs. onions, minced
½ cup kernel corn, drained
1 tsp. parsley, chopped
½ tsp. Worcestershire sauce
Combine soup and water, stirring until smooth. Add rest. Heat to boiling and simmer 5 minutes, stirring frequently. 3 servings.
Raisin Scones
2 cups flour (can use 1/2 whole wheat)
3 tsp. sugar
4 tsp. baking powder
¼ tsp. salt
½ cup raisins
¼ cup butter or margarine
1 beaten egg (reserve a little of the egg)
up to ½ cup milk
Stir dry ingredients, including raisons. Cut in butter until mixture is like crumbs. Add 1 egg and milk, stirring just until dough clings. Knead gently on a floured surface 12-15 times. Divide dough into two balls, rolling each into a circle about ½ to ¾ inch thick. Cut into 6-8 wedges and brush tops with slightly beaten egg.
Bake at 450^ for 10-15 minutes. 12-16 scones.
Loretta Manziuk's Cabbage Casserole
4 cups finely shredded cabbage 1 tsp. basil
½ cup minced green pepper ¼ cup flour
1 onion, chopped fine oil
¾ cup raw rice 1 can cream of tomato soup
1 lb. ground beef 1 cup boiling water
1 tsp. salt
Put 1st three together with rice and spread in the bottom of a casserole. Mix meat with flour and spices. Brown in oil. Spread on top of the rice mixture. Top with soup and then boiling water. Bake at 350^ for 1 hour.
Beef Stew with Biscuits
1 small onion, sliced
1 Tbs. shortening
1 lb. beef stew met (or round steak), cubed
4 cups boiling water
2 tsp. salt
¼ tsp. pepper
2 bay leaves
¼ tsp. each basil, thyme, marjoram, rosemary
2 cups sliced carrots
2 medium onions, chopped
2 cups peas
1 cup diced potatoes
½ cup diced celery
½ cup cold water
¼ cup flour
Cook and stir sliced onion in hot shortening until tender. Add meat and brown on all sides. Add boiling water and spices. Cover and simmer over low heat until tender (2-3 hr.) (or use pressure cooker).
Add vegetables and simmer 20-30 minutes (until vegetables are tender). Meanwhile, make biscuits.
Put meat and vegetables from broth into an 8” square baking pan. Skim fat. There should be about 3 cups broth. Heat it in pan and shake the ½ cup cold water with ¼ cup flour to form a paste. Add to broth, slowly, while stirring. Heat to boiling and boil 1 minute. Pour over meat, top with biscuits, and cook in a 450^ oven for 20 minutes.
Biscuits
2 cups flour (½ whole wheat)
3 tsp. baking powder
1 tsp. salt
1/3 cup salad oil
2/3 cup milk
Mix together dry ingredients. Add oil and milk together and stir with a fork. Knead 10 times. Pat or roll dough to ½“. Cut with biscuit cutter. (about 3”)
Lindquist Saturday Night Special
This is another of my sons' favorites. We got the recipe from my husband's mother.
6 eggs
2 Tbsp. white sugar
2 Tbsp. oil
2 cups milk
1 1/2 cups white or whole wheat flour or half and half
cinnamon sugar* or fruit (canned or fresh)
1. Mix first four ingredients in a blender or with a mixer in a deep bowl.
2. Add flour slowly while continuing to blend or mix
2. Drop about a 1/4 cup on a hot, oiled griddle.
3. Rotate griddle to allow the mixture to spread and form a large circle.
4. Turn over as soon as the edges begin to curl.
5. Cook about 30 seconds longer, then use a spatula to flip it onto a plate.
6. Spread with cinnamon sugar, drained fruit, etc. and roll up.
7. Eat (fingers are allowed).
Cinnamon Sugar
Mix 3 Tbsp. white sugar with 1 Tbsp. cinnamon.
The Best Brownies Ever
¼ cup butter (or margarine) at room temperature
1 cup brown sugar
1 egg
¾ tsp. vanilla
¾ cup white flour (I use whole wheat pastry flour)
1 tsp. baking powder
1 Tbs. cocoa
¼ tsp. salt
1 cup walnut pieces
In a medium-sized bowl, cream the butter until smooth. Add sugar and blend in. Beat in the egg and the vanilla. Mix the flour, baking power, cocoa and salt in another, smaller bowl, then add to the main bowl and mix in just until combined. Add walnuts. The mixture will be quite thick. Scoop large spoonfuls into a lightly greased 8” by 8” pan that has been dusted with 1 tsp. cocoa or flour. Spread with a knife or the back of a large spoon. Bake in a moderate oven (350 degrees) for about 25 minutes, or until a toothpick inserted into the center comes out clean. The edges may seem a little dry, but that isn’t a problem.
Chocolate Frosting (optional if you are counting calories)
1 Tbs butter
1 cup icing sugar
1 Tbs cocoa
1 ½ Tbs. milk
1 tsp. vanilla
Using a spoon or electric mixer, cream butter. Mix in milk and vanilla. Add ½ cup icing sugar and cocoa. Beat just until everything is mixed in. Add up to another ½ cup of icing sugar, adding a tiny bit more milk if too dry, more icing sugar if too thin. Spread on brownies when they are cool. If desired, put some whole walnuts on top for decoration. Cut into 20 rectangles or 16 squares.
Lemon Meringue Pudding
2 egg whites
2 egg yolks
3/4 cup white sugar
juice and rind of one lemon
2 Tbs. flour
dash salt
1 cup milk
Beat egg whites until stiff. Beat in 1/2 the sugar. Mix together lemon, the rest of the sugar, and egg yolks. Stir in flour and salt, then milk. Fold into the egg whites. Put in a greased casserole dish. Set in a pan of warm water. Bake 40 minutes at 350^. Done when a knife comes out clean.
